Light, fluffy, and low-carb — this Cloud Bread is perfect as a keto-friendly bread substitute or a soft, airy snack.
Ingredients
- 2 ounces cream cheese (at room temperature)
- 3 large eggs (at room temperature)
- 1/4 teaspoon cream of tartar
- 1/8 teaspoon coarse salt

Instructions
- Preheat oven to 300°F (150°C) and line a large baking sheet with parchment paper. Gather the ingredients.
- In a medium bowl with an electric mixer, beat the cream cheese until smooth and creamy.
- Separate the eggs and place the yolks in the bowl with the cream cheese, and the egg whites in another bowl with the cream of tartar and salt.
- Beat the cream cheese with the yolks until combined and perfectly smooth.
- Clean and dry beaters thoroughly, then beat the egg whites until stiff peaks form (2–3 minutes).
- Gently fold the egg whites into the yolk mixture until completely combined but still fluffy. (Do not stir or the eggs will deflate.)
- Divide the mixture into 8 mounds (about 1/3 cup each) on the prepared baking sheet, spacing them 4 inches apart.
- Bake until golden, about 25–30 minutes.
- Cloud bread is quite mild in flavor. Try these tasty variations:
• Pizza Cloud Bread: Add 1½ tsp Italian seasoning, 2 tbsp freshly grated Parmesan, and 2 tsp tomato paste.
• Everything Cloud Bread: Add 1 tbsp Everything Bagel seasoning.
• Ranch Cloud Bread: Add 1½ tsp ranch seasoning mix.
Notes
Serve warm or store in an airtight container for up to 3 days. Toast lightly before serving for best texture.
