Description

Light, fluffy, and low-carb — this Cloud Bread is perfect as a keto-friendly bread substitute or a soft, airy snack.


Ingredients

  • 2 ounces cream cheese (at room temperature)
  • 3 large eggs (at room temperature)
  • 1/4 teaspoon cream of tartar
  • 1/8 teaspoon coarse salt
  • {seasoning options below}


Instructions

  1. Preheat oven to 300°F (150°C) and line a large baking sheet with parchment paper. Gather the ingredients.
  2. In a medium bowl with an electric mixer, beat the cream cheese until smooth and creamy.
  3. Separate the eggs and place the yolks in the bowl with the cream cheese, and the egg whites in another bowl with the cream of tartar and salt.
  4. Beat the cream cheese with the yolks until combined and perfectly smooth.
  5. Clean and dry beaters thoroughly, then beat the egg whites until stiff peaks form (2–3 minutes).
  6. Gently fold the egg whites into the yolk mixture until completely combined but still fluffy. (Do not stir or the eggs will deflate.)
  7. Divide the mixture into 8 mounds (about 1/3 cup each) on the prepared baking sheet, spacing them 4 inches apart.
  8. Bake until golden, about 25–30 minutes.
  9. Cloud bread is quite mild in flavor. Try these tasty variations:
    Pizza Cloud Bread: Add 1½ tsp Italian seasoning, 2 tbsp freshly grated Parmesan, and 2 tsp tomato paste.
    Everything Cloud Bread: Add 1 tbsp Everything Bagel seasoning.
    Ranch Cloud Bread: Add 1½ tsp ranch seasoning mix.

Notes

Serve warm or store in an airtight container for up to 3 days. Toast lightly before serving for best texture.
