Description

Quick and easy 3-ingredient peanut butter cookies with a soft, chewy texture — ready in just 15 minutes.

Ingredients

  • 1 cup regular peanut butter
  • ¾ cup granulated sugar
  • 1 egg
  • Flaked sea salt (for topping, optional)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Add all the ingredients to a medium mixing bowl and mix to combine using a spatula or hand mixer.
  3. Using a tablespoon scoop, roll the dough into balls and place 2 inches apart on the baking sheet.
  4. Flatten each dough ball with a fork, making a crisscross pattern.
  5. Bake for 9-12 minutes, or until the cookies are slightly golden brown around the edges and the bottom.
  6. Remove and immediately sprinkle with flaked sea salt, if using. Let cookies cool a few minutes on the baking sheet, then transfer to a cooling rack to cool completely.

Notes

Use creamy peanut butter for the best texture, and don’t overbake — cookies will firm up as they cool.
